The climate crisis is not the fault of a single individual but of several corporations and while a single meal will not save the world, we can try our best to make positive changes. I try to shop mindfully when it comes to food and this meal humbly represents that: zero-waste farro from the bulk shop, mustard purchased in glass instead of in plastic, and a totally vegan meal for a reduced carbon footprint. This caramelised onion and garlic farro with charred tomatoes and a mustardy cucumber salad is my contribution to a better world.
